I don’t know about Taipei to Incheon, but I always take economy class Korean Air to Incheon from JFK Airport, NY. I go every other Summer. The color of the seat is navy blue, and each is provided with a small pillow. You can get a blanket by request. The "facility" is very clean, as long as you do your part to keep your seat clean. It has an adjustable head rest, so you can bend the ends in to support you head when you sleep. I believe there was, in fact, a foot rest. You get maybe a 1 1/2 feet worth of legspace. Arm space, it’s just the distance between you and the person next to you. I believe the economy classes has just begun making LCD screens built into their seats. So you have entertainment access whenever. The food is fairly good actually, and the flight attendents’ service is excellent. They are very polite. The seat looks like a high-quality cushioned office wheely chair, navy blue. As for entertainment, there are movies playout throughout on the big screen, and you can listen to your audio at anytime. I was uncomfortable because there was a baby crying non-stop behind me. The "facility" is sanitary and kept as clean as possible. Services like duty free and beverages come around, also.
The most outrageous thing I ever did on a Korean Air Economy Class plane ride was I bought 5 seats in the middle just for me. It was the best plane ride ever. I could lay down and still have extra room. I made it like my dorm, haha! I wish I would have taken pictures…

I’ve flown Korean Air not to Taipei though although I plan to do that in September. The service was excellent. Be mindful of passengers poking you in the back though. I found it extremely irritating. They were either in a rush to go to the toilet or get off the plane.
